The Breadmaker Guru Is It Necessary To Use Gluten When Baking Bread In A Breadmaker?

Is it necessary to use gluten when baking bread in a breadmaker? - the breadmaker guru

I have for the first time for a new bread maker. I meet a lot of fun experimenting, and very successful. Recently, I received a cookbook gluten free bread machine new calls for each recipe. However, all the recipes I found online and the manual is not necessary to that ingredient. In fact, the manual, even if I live in Canada, what I do, I use flour instead of bread flour b / c it has a high number of gluten. (Going more bread flour if the application). I think I have the bread was very good. However, no gluten Add really big difference?

I make my own bread all the time and rarely use gluten. I live in the United States and use bread flour (which is higher) in the AP U.S. gluten. Yes, you can use AP flour instead of bread flour, four in Canada more difficult (higher in gluten than the United States (more sweet). "LL have to increase the gluten in wheat or other grains.

Gluten is a mixture of proteins found in cereals. The long molecules of gluten, insoluble in water, are strong and flexible, and many links. This gives flour its characteristic chewiness and permits for bread and cakes during baking and the expansion of the gas trapped in the gluten superstructure increases. Several different amounts of flour, gluten, starch () so-called hard and are adapted to different types of food. Thus, the flour for cakes, harder flour for pastry flour used for bread and hard the hardest, or durum wheat for pasta.

What does not bake the bread, but I think the glue is already in the wheat flour does. I think you have the independence of gluten. If you want, not knowing that the yeast of the bread machine and use. I know you have the regular flour for these machines.
Good luck! and yummmmm!
